Olive olils | n. phr.
the  fat that is obtained from certain animal products or tissues. It is generally saturated and, therefore, solid at room temperature. Its excessive consumption is detrimental to health, mainly because it leads to an increase in cholesterol and the subsequent greater risk of cardiovascular  disease.

the fat of land animals and such vegetable oils as coconut and palm are less beneficial than other vegetable fats, because it is rich in  saturated fatty acids, which are harmful to the  body. By contrast,  olive oil and such seed oils as sunflower, corn and soybeans, and fish fat are mainly unsaturated and are therefore highly recommended for the human diet.
