The obligatory storage of olive oil, in order to settle and separate the sediments (dregs), is done in storage tanks made to special strict standards (INOX 316 L) in a specially designed storage space, which is stone-made and northerly orientated.

Composting experiments are being carried out with olive dregs, olive tree leaves and olive tree wood, triturated all together and manure act as a nitrogen source, since its nutritional value is higher than the abovementioned elements.
