this is the first stage in the  production of  olive oil, regardless of the separation method employed subsequently. Today some mills  pit the olives prior to  milling in order to obtain oils with milder organoleptic features. milling is such an important step in the production of oil that olive production facilities are commonly called mills, even though other industrial processes are also involved in olive  production.
