A change in the colour of olives from green to black that is used as a criterion in the maturity index.

Example

The veraison olives produce the greatest amount of oil which is less pungent and bitter, while the blackskinned olives produce the smoothest tasting oil.

Example

Five sampling dates were chosen during the whole season: vegetative resprouting, full bloom, pit hardening, fruit veraison and vegetative rest.
