Industry | n. m.
A solid by-product that is extracted from the paste in the traditional and the three-phase systems. It consists of peel, pulp and water, plus a minimal fraction of oil that is used by the oil industry to produce olive-residue oil.

Example

The potential use of composted olive mill pomace as organic fertiliser and as a source for organic matter and carbon fulfils some of the objectives of sustainable agricultural systems.
